Pop in some chunky aubergine and courgette pieces, use a tin of baked beans, add some natural yoghurt and don't hold back on the cumin. That's how I make banging chilli, aside from the usual stuff. I've slow cooked it a few times, but I'm never organised enough and I find a 40 minute chilli batch is just fine.

Here's my chilli recipe:

500g lean minced beef.

Large tin of chopped tomatoes.

Small tin of kidney beans.

1/2 large onion, chopped.

2 crushed garlic cloves.

1 bottle of beer.

Tomato puree – either one of those wee tins or half a tube.

2 teaspoons cumin.

2 teaspoons of hot chilli powder or 3 teaspoons of mild chilli powder.

1 teaspoon of salt.

1 teaspoon of pepper.

Couple of pieces of dark chocolate.

Soften the onion in a decent sized pot, then add the mince and brown.

Add the garlic, cumin, chilli powder, salt and pepper and mix.

Add the chopped tomatoes, tomato puree and beer and stir while bringing to boil.

Reduce the heat to a low simmer, cover the pan and cook for 50 minutes.

Drain and rinse kidney beans and add to the pan along with the chocolate and stir.

Cook for a further 15 minutes.

Once it’s ready, let it cool and store in fridge overnight.

Next day, reheat and serve with boiled rice.

It can be eaten straight away but it tastes f**king amazing leaving it for a day.

I made sausage rolls on Saturday for some friends who came over for drinks

So easy Dave ripped off the idea for Hogmanay. Just got some tesco's finest sausages, removed them from the skins and put the meat into some ready rolled puff pastry. They were awesome.

This was banging. Made it on Friday night, had it for lunch and dinner yesterday. The beer is an absolute masterstroke, I've never even thought of making chilli with that before. Two thumbs up. Excellent recipe.

I whacked a bottle of William Wallace in there. I had never tried the beer before, but if I'm going to put beer in my chilli then I may as well choose one that's named after a celtic skull-smasher.

I'm going to try both Officertwin recipes at some point in the near future and report back.
