yeah, I've recovered a few cabs. You need a warm place to do it first off. I've tried the different types of adhesives and the water based ones don't work- you need the carcinogenic/hallucinogenic ones that smell like model airplane glue for it to work because they hold better and they soften the tolex so you can stretch it to fit. From there, not a big deal, you can cut the new pieces using the old ones as a pattern, brush on the glue and go for it. There are a couple of on-line guides that show you how to do it, google is probably a help here. Work slow, and do it in a big, warm space and chances are you'll be fine.
