  1. Recipe please.

     

     

    Here you go Adam .... simple but well tasty :

     

    Smoked Haddock & Prawn Paella

     

    2 tsp Olive Oil

    1 Medium Onion, finely chopped

    2 Garlic Cloves, crushed

    5 Saffron Strands

    1 Red Pepper, deseeded & diced

    225g (8oz) Arborio Risotto Rice

    850ml (1.1/2 pints) Fish or Vegetable Stock

    125g (4.1/2 oz) frozen Garden Peas

    225g (8oz) skinless Smoked Haddock fillet, cut into bite-sized pieces

    125g (4.1/2oz) Peeled Prawns

    2Tbsp fresh chopped Parsley

    Salt & freshly ground Black Pepper

     

    Method:

    Heat the oil in a large frying pan and add the onion and garlic, cook over a low heat, stirring until onion has softened, but not browned.

     

    Place the Saffron in a small dish and cover with 2 tablespoons of boiling water, leave to stand, so saffron infuses and colours the water a bright yellow.

     

    Add the Red Pepper and Rice to the pan, saute slightly for 2 mins, then add the saffron and its soaking liquid, then add all the stock, Bring to the boil, then reduce heat and simmer for 15 mins, stirring every so often, until most of the liquid has been absorbed.

     

    Add the frozen peas and Smoked Haddock pieces, and continue cooking for 5 mins .... Toss in the Prawns and Parsley, season with salt & pepper to taste, and cook for a further 2 to 3 minutes until piping hot .

     

    Serve ...... Eat and Enjoy

    Me? ... A poppy seed bagel with peanut butter. Bog standard bagel, above average peanut butter which had been nicely chilled. 6.5/10

    What we had, just 25 mins ago !!

  3. Anyone seen the Hairy Bikers diet show? Some decent recipes. Will try some and report back.

    I have their book, and made some good stuff from it already .....

  4. For all you soup lovers ...... (my god, it's really fine)

    Butternut Squash & Red Pepper Soup

    (Serves 4)

    (Soup can be frozen)

    1 Tbsp Vegetable/Olive Oil

    1 Medium Butternut Squash (deseeded, peeled & diced)

    2 Medium Red Peppers (deseeded & diced)

    1 Medium Onion (peeled & finely chopped)

    2 Garlic Cloves (peeled and crushed)

    1 tsp Mixed Herbs

    1.1/2 Pints Vegetable Stock (Use 2 stock cubes)

    1 200g Tub of Philadelphia Soft Cheese (Plain or Garlic&Herb)

    Salt & Ground Black Pepper

    Heat oil in large lidded saucepan and saute the onion & garlic untill soft and slightly brown.

    Add Red Peppers and Butternut Squash cubes, and stir fry for approx 2 mins.

    Add mixed herbs and cook for a few more minutes, then add Vegetable stock, bring to the boil, reduce heat, then cover & simmer over a medium heat for 25 minutes or until peppers & squash are soft cooked.

    Add Salt & Black pepper to taste .....

    Carefully blend soup in a blender/food processor until nice and smooth (be careful, soup is very hot)

    Spoon into soup the Soft Cheese and stir in until cheese is incorporated.

    Serve into warmed bowls.

    Great with warm crusty buttered bread !
