a multitrack is designed for very basic/portable recording, and are usually only used for small bedroom studios etc. large studios use lots of equipment because like most things, the best equipment is designed specifically for certain jobs. large desks are used for mixing down a large amount of seperate tracks and allow complex routing to effects processors like compressors etc which are often considered essential in modern recording. computer interfaces are great for digital editing and restoration and also open the door to software based effects/instruments, and seperate hardware designed exclusively for limiting/mastering is desirable also.
