If it's big thick cheddar slices and some wafery floppy meat, cheese on the bottom for structural rigidity. If it's a hot sammich, or soft cheese, then cheese on top. Cut straight across the middle. 2 slices of bread = 1 sandwich unless it's a bap or baguette, wotever. Baguettes can fuck off though.
