Retard question time. If I have a mixing desk with (say) 8 XLR inputs and a USB output, does that mean I can multitrack those 8 inputs on 8 different channels in my DAW?

What kind of desk are you looking at? I think there is a version of the Alesis multimix that has that multitrack function. Some have the ability to act as a sound card but only to record multiple instruments onto one track.
