girl anachronism Posted December 4, 2008 Report Share Posted December 4, 2008 Try this if you manage to get your skins really crispy:Finely chop an onion and lightly fry it in olive oil with a couple of crushed garlic cloves.Scoop out all the potato from the skins and chuck that in the pan too.Sprinkle a load of paprika in.Put it all back in the skins and liberally drizzle sweet chili sauce all over it. (or for an alternative try some cream cheese that has a bit of a kick to it, I like Tofutti Garlic & Herbs, it's amazing, but I imagine Philly would do something similar).
